Three cups of chicken is a local traditional dish in Jiangxi Province. According to legend, the origin of this dish is related to the national hero Wen Tianxiang.
At the end of the Southern Song Dynasty, Wen Tianxiang was captured by the anti-Yuan, and a white-haired grandmother knew that Wen Tianxiang was about to be killed. He took a chicken and a jug of wine to visit him in prison.
With the help of a jailer from Jiangxi, the old lady’s chicken was cut into pieces, the wine was poured in, and the small fire was used to make Wen Tianxiang’s last meal.
After the jailer returns to his hometown, he will use this dish to sacrifice heroes every time he celebrates the day. Later, the chef changed three glasses of wine into a glass of sweet wine, a cup of soy sauce, and a cup of lard, making it a modern dish.
In 2008, this dish was also selected for the Olympic main menu during the Beijing Olympics.
